PREMIUM BELUGA

ADAMAS® Premium Caviar is a fresh Italian Caviar obtained from the Beluga sturgeon ( Huso Huso ) also commonly called Ladano sturgeon. Certainly the largest of the sturgeons, weighing more than 1000 kg. Very common in Eastern countries, but in the past also present in Italy in the Adriatic Sea. We wanted to make a classification between the two Belugas: Imperial Beluga and Premium Beluga. The distinction between the two is mainly dictated by the age of the fish; in fact, the beluga does not reach maturity before 20 years of age. However, there are cases in which around 15 years of age this type of sturgeon manages to ovulate for the first time thanks to a number of factors including water temperature.

Recently, higher temperatures have made this phenomenon possible. Premium Beluga caviar will resemble Imperial Beluga but will have different characteristics starting with a less intense and elongated taste and a smaller egg grain. The unmistakable light grey colour of Beluga will remain a distinguishing mark in both selections.

The best way to taste this caviar, like Imperial Beluga, is on its own, so as to fully appreciate the flavour. A classic pairing is black bread and salted butter, accompanied by vodka or champagne.
