The Acipenser Stellatus or Starry Sturgeon is a freshwater and seawater fish, belonging to the family Acipenseridae. This specie is common in the Black Sea and the Caspian Sea. Its morphological characteristics are a very stretched, narrow and flattened snout. It can weigh more than 50 kg, and is omnivorous. Its caviar is generally known as Sevruga.
Aromatic notes
Very intense, creamy taste reminiscent of dairy products. The grain is generally small and tends to be dark black to anthracite in colour.

Aficionados taste it on its own to appreciate its intense notes, but a classic and always successful tasting is the traditional toast with butter or a fantastic butter spaghetti with caviar. It goes well not only for garnishing dishes but also to season them because of the rich oils. Sevruga Adamas® caviar goes well with sparkling and white wines based on Chardonnay or Vermentino.
